    Cookies for breakfast? Are you serious?!?

    Yes, yes we are.

    These wholesome cookies are amazing for your morning meal! Why? They have zero sugar; they include bananas, cinnamon, and applesauce; and you can bake them to be rich in protein!

    There are plenty of other fruits and nutritious ingredients that go into making these delectable cookies, so you won’t feel any of the guilt that you might feel eating regular cookies. Plus, they are amazing for those times you’re in a time crunch and need a snack to-go.

    Ok, enough with the chatter…let’s get to those awesome cookies, shall we?

    Ingredients

    • 3 ripe bananas, mashed
    • 1/2 of a cup of unsweetened applesauce
    • 2 tablespoons of coconut oil
    • 1/3 of a cup of golden raisins
    • 1 teaspoon of vanilla extract
    • 1 teaspoon of apple cider vinegar
    • 1/3 of a cup of coconut flour
    • 1 teaspoon of ground cinnamon
    • 1 teaspoon of baking soda
    • 1/4 of a teaspoon of sea salt
    • An optional scoop of vanilla protein powder (for added protein)
    • 1/2 of a cup of unsweetened shredded coconut
    • 1/4 of a cup of sliced almonds
    • 1/4 of a cup of unsweetened dried berries

    Instructions

    1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
    2. In a food processor, combine the bananas, applesauce, coconut oil, raisins, vanilla extract, and vinegar. Pulse until smooth.
    3. In a medium bowl, combine the coconut flour, cinnamon, baking soda, salt, and protein powder. Add these ingredients to the food processor and pulse until combined. Add the coconut flakes, almonds, and dried berries. Pulse them briefly until just incorporated.
    4. Use an ice cream scooper to place the dough 2 inches apart on the prepared baking sheet. Flatten it slightly. Bake until golden and baked through (around 25-35 minutes).
    5. Allow them to cool for 5 minutes on the pan, then transfer them to a cooling rack. Store them in an airtight container in the fridge.
