These veggie chips are the perfect substitute for their oilier counterpart (yes, we’re looking at you fried potato chips).

All you you have to do is slice up your favorite root vegetable and bake it in the oven for that crispy flavory. No frying required!

Try making a large batch on the weekend so that you can take them on the go with you during the week.

Ingredients

a plate of sweet potato veggie chips

  • 2 lbs of root vegetables, thinly sliced (sweet potato, parsnips, beets or carrots)
  • Sea salt
  • Cajun spice

Directions

  1. Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment paper.
  2. Thinly slice the root vegetables with a mandoline slicer, to 1/8 inch thickness. Toss the sliced veggies with a sprinkle of sea salt and Cajun spice.
  3. Spread the sliced veggies over the prepared baking sheet. Roast for 20 minutes, or until crispy. Enjoy!
