Recipes: Turkey Lettuce Wraps with Quick Apple Chutney

Then try making these delicious turkey lettuce wraps! They’re protein-based, healthy, and just sweet enough to satisfy your tastebuds.

In this recipe, the organic ground turkey is sprinkled with a bit of ground cinnamon, and each wrap is topped with a tasty apple chutney. Oh, and all of it sits on a bed of lettuce, which reduces the amount of carbs in each wrap. They’re also great for when you’re on the go and in need of a healthy snack.

Ingredients

  • 12 large romaine lettuce leaves

For the Cinnamon Ground Turkey RiceFitbody Bootcamp

  • 1 tablespoon of olive oil
  • 2 carrots, shredded
  • 1/2 of a yellow onion, minced
  • A dash of sea salt
  • 1/2 of a teaspoon of ground cinnamon
  • 1 lb. of organic ground turkey
  • 1 head of cauliflower, shredded
    • Note: To shred, cut the cauliflower into florets and run through a food processor with the grating attachment
  • 1/3 of a cup of golden raisins
  • 1 cup of chicken broth
  • A dash of freshly ground pepper

For the Quick Apple Chutney

  • 1 tablespoon of coconut oil
  • 1/2 of a yellow onion, minced
  • 2 green apples, chopped
  • 1/4 of a teaspoon of ground cinnamon
  • 1 tablespoon of coconut crystals
  • 1/2 of a cup of apple juice or apple cider
  • A sprinkle of sea salt

 

Instructions

  1. For the cinnamon ground turkey rice: Pour the olive oil into a large skillet over medium heat. Add in the carrots and onions, then cook until soft (about 3 minutes). Add in the salt, cinnamon, and ground turkey. Cook until the meat is no longer pink. Add in the head of shredded cauliflower, raisins, broth, and pepper. Cook until heated through (about 4 minutes).
  2. For the quick apple chutney: Pour the coconut oil into a medium skillet over medium heat. Add in the onion and apples. Cover and cook for 10 minutes. Uncover and add in the cinnamon, coconut crystals, apple juice, and salt. Bring it to a boil, then simmer it until the apples are tender (about 4 minutes).
  3. Assemble your lettuce wraps: Spread a generous spoonful of the turkey mixture along the center of a romaine lettuce leaf. Top each leaf with a spoonful of chutney. Enjoy!
