In the morning, there’s nothing more inviting than the warm smell of freshly cooked breakfast. Especially eggs.
One of the most delicious ways to eat eggs in the morning is in an omelette—a scrumptious egg disk stuffed with vegetables and meats. Unfortunately, omelettes are often packed with too many unhealthy ingredients, resulting in a meal that LOOKS healthy but really isn’t.
Today’s Greek omelette is made into a waffle shape that’s easy to eat, even when you’re out of the house! The best part? It’s only 279 calories—nearly half the amount you’d find in a normal omelette! You can even substitute in other veggies to fit your taste without sacrificing any nutritional value.
Let’s get to it!
- Olive oil spray
- 6 eggs
- 1/4 of a cup of milk
- 1/4 of a cup of feta cheese, crumbled
- 1/2 of a cup of roasted red bell pepper, thinly sliced
- 1/4 of a cup of Kalamata olives, seeded and chopped
- 1/4 of a cup of fresh broccoli, chopped
- 1/4 of a teaspoon of sea salt
- 1/4 of a teaspoon of black pepper
- 2 links of chicken sausage, chopped
- Preheat your waffle griddle on medium low heat. Spray generously with olive oil.
- In a large bowl, combine the eggs, milk, feta, bell pepper, olives, broccoli, sea salt, black pepper, and chicken sausage. Mix well until it’s fully combined.
- Transfer 1/2 of a cup of the omelette batter into the waffle iron. Close and cook it until golden and cooked through. Transfer it to a plate, and continue cooking the remaining batter in 1/2 cup scoops. Enjoy!
